Clean Smoke: Fire Management for Better Barbecue

Better smoke begins with a fire that can breathe
“Thin blue smoke” is useful barbecue shorthand, but color alone does not certify a clean fire. Against a bright sky, good exhaust may look nearly invisible; against trees, it may look pale blue or white. Watch the coal bed, temperature, airflow, aroma, and exhaust together.
Dense, stale smoke often tastes bitter because fuel is smoldering instead of burning efficiently. The cure is usually better combustion, not a more heroic spice rub.
Start with the cooker in a safe outdoor location
Operate fuel-burning grills and smokers only outdoors as their manufacturers direct, away from openings, structures, vegetation, and combustibles. Never use one in a house, garage, tent, shed, camper, or partly enclosed cooking area. Charcoal, wood, and gas combustion can produce carbon monoxide, an invisible gas that can cause severe illness or death.
Keep a suitable extinguisher or other manufacturer-recommended fire control available. Check local restrictions, especially during dry or windy conditions. Do not leave a lit cooker unattended, and keep children and pets clear of hot metal and exhaust.
Build a coal bed before asking wood to behave
Light an appropriate quantity of charcoal or kindling using an approved method. Never use gasoline, paint thinner, or another improvised accelerant. Allow the starter smoke to clear and fuel to become visibly established before adding food.
In a charcoal cooker, glowing coals provide stable heat while a small hardwood chunk supplies flavor. In an offset, a compact active fire with visible flame often burns cleaner than a large pile of smoldering wood. Follow the cooker's manual because an offset, kettle, kamado, drum, and pellet unit move air differently.

Leave the exhaust open
Keep the exhaust vent open unless the manufacturer explicitly says otherwise. Exhaust gives combustion gases, moisture, and stale smoke a path out. Choking it can trap harsh smoke and weaken the fire.
Control temperature with the amount of burning fuel and small intake adjustments. Move one vent at a time, then wait several minutes for the cooker to respond. Rapidly spinning every control creates data about panic, not airflow.
Measure temperature near the food with a cooker thermometer. For hot smoking meat, maintain the safe operating range appropriate to the recipe; 225°F to 300°F (107.2°C to 148.9°C) is a standard hot-smoking range. Use a separate food thermometer to verify the meat's safe endpoint.
Add small fuel before the fire collapses
Learn how long one load burns in your cooker. Add a small amount while a healthy coal bed remains rather than waiting for temperature to plunge and then burying weak coals under cold fuel.
Fresh wood can release a temporary pale plume as it heats. Give it oxygen and time to ignite cleanly. If smoke remains thick and smells sharp, creosote-like, or acrid, keep the food away until the fire improves.
Common corrections include opening the intake modestly, clearing an obstructed exhaust, reducing oversized fuel, or removing a smoldering piece with safe tools. Grease hitting the fire can also create dirty smoke; use the cooker's drip-management system and clean accumulated grease when everything is fully cold.
Match smoke quantity to the food
Smoke is seasoning. A few clean additions over a long cook can create ample flavor, while continuous heavy smoke may make the bark bitter and numb subtler seasoning. Smaller foods need less exposure than large cuts.
